WHAT IS PIZZA ROMANA?
Pizza Romana is a classic pizza style from Rome, famous for its thin, crisp crust and rich flavor. Unlike the softer, doughier Neapolitan pizza, the Roman version, often called bassa e scrocchiarella (thin and crunchy), is rolled out flat and baked until golden and crisp.
The origins of Pizza Romana date back to the post World War II period in Rome, when pizzaioli began experimenting with longer fermentation and high-hydration doughs to create a lighter, crispier base. Over time, it evolved into two main types: the round pizza tonda, served in restaurants, and the rectangular pizza al taglio (pizza by the slice), a popular Roman street food sold by weight.
Today, Pizza Romana is celebrated both in Italy and abroad for its perfect balance of crunch, flavor, and authenticity a true taste of Rome.
